When it comes to Farmers’ Markets, Central Florida certainly has an abundance of options when it comes to these showcases of local produce and other products.

In my previous Farmers’ Markets adventures, I have found gluten and dairy free options at both the Maitland Farmers’ Market and Lake Eola Farmers’ Market (see restaurant directory above). I knew immediately that I had to head north of town upon discovering The Bite Bakery, an up-and-coming cookie company that features allergen-friendly, vegan cookies “with a conscience” at the Sanford Farmers’ Market. Needless to say, I was sold on their premise and mission, and am eager to check out and submit myself for a taste test or two. 


The “bite” of Bite Bakery comes from a fateful spider bite that forever changed founder Natasha’s life. That one encounter triggered an immune response that resulted in several suddenly acquired food allergies. Missing her favorite treat- a cookie- she channeled her baking expertise into producing allergen friendly cookies anyone and everyone could enjoy.


What’s most impressive about this one-size-fits-all cookie company is that they are safe for vegetarians, vegans, and those with a complicated web of food allergies/intolerances. 

That’s right: These cookies are gluten/wheat, soy, nut, egg, dairy/lactose/casein, GMO, and preservative-free and also happen to be all natural and vegan. By checking off so many “special diet” boxes, they’re definitely one of the most one-size-fits-all cookies I’ve found to date! 


On the particular Saturday I visited, the three varieties featured were snickerdoodle, chocolate sea salt, and sugar. I bought one each of the first two varieties and passed over the sugar since I’m not a big fan of this particular cookie variety.

If I had to describe the snickerdoodle cookie in one word, it would be: cinnamon-y. Soft-baked and sweet with a generous dusting of cinnamon on top, the cookie had old-fashioned taste and charm. For a serious cinnamon enhancement, I actually ate the cookie upside down so that the cinnamon topping was the first to touch my tongue and boy, did this please my cinnamon-loving taste buds!

The salted chocolate cookie intrigued me as it combined the classic sweetness of a chocolate chip cookie with a salty twist. Scoring points for originality, I loved the competing tastes which turned the cookie into a complexly flavored treat. Just as I inverted the snickerdoodle for maximized cinnamon-ness the inversion of this cookie really allowed the saltiness to shine and compete with the sweetness. This cookie was my favorite of the two, but I was glad I came home with only one each because I could have easily eaten a couple more of both varieties.

But wait- there’s more. Not only are these cookies delicious and allergen-friendly, but the Bite Bakery is environmentally ethical as well. All of the cookies’ ingredients are organically-sourced when possible and always free from artificial or genetically modified ingredients. All of the cookies are packaged in 100% compostable material as well.


If you’re craving a bite of something sweet, salty, or a mix of both, I definitely recommend stopping by the Sanford Farmers’ Market or Dandelion Cafe for a introductory taste of The Bite Bakery. I definitely look forward to visiting them again and seeing their presence grow!
