Starting off my month of all things baking, I selected Moon Rabbit Foods’ oatmeal cookie mix as my first product to review. Not a brand I’ve found at my local grocery and specialty stores, I instead ordered the oatmeal cookie mix on Amazon after craving the classic, homestyle taste of oatmeal cookies.
Arriving as fast as the proverbial hare, the mix arrived and was too tempting to sit on my grocery shelf for too long. Wanting to mix up my typical almond butter and fruit breakfast, I decided to bake a batch as an early morning treat. After all, with oatmeal as the main ingredient- they totally qualify in the breakfast department!
The mix doesn’t require a bunch of expensive, hard-to-find ingredients to bring it to life, just butter, vanilla extract, one egg, water, and opens the possibility of additional mix-ins such as cinnamon, raisins, chocolate chips, or nuts. Instead of butter, I used a stick of Earth Balance soy free vegan butter, which works as a one-to-one substitute, and helps me minimize the amount of soy I consume. The oats in the mix are certified gluten-free, and the mix itself is certified gluten-free and free from the top eight allergens. The facility that produces the mix however, uses nuts, dairy, and sot.
Although the instructions call for using a mixer to get the mix the dough, I resorted to using old fashioned manual labor given my cooking apparatus restraints cooking in my dorm’s kitchen. Despite a difficult beginning, the mix soon came together nicely and formed a moist, sticky dough. Using a tablespoon, I was able to make 24 cookies portioned from heaping tablespoons. I did not use any mix-ins besides cinnamon, wanting the mix to do all the talking for itself.
Into the oven the cookies went, and about twenty minutes later, the cookies emerged, big, beautiful and picture perfect. Flattened to a 4″-5″ diameter, the cookies were massive, golden-brown and impressed unsuspecting gluten-eaters as I carried them back up to my dorm. Taking a bite of one, I melted into the rich, chewy texture that is enhanced by the grain of the oats and unmistakable taste of brown sugar. Not too sweet, the cookies tasted old fashioned in a good way, playing to the power of simplicity. They disappeared quickly as I offered them to friends, and none suspected that they were gluten-free and dairy-free!
Overall, I was really satisfied by Moon Rabbit Foods’ oatmeal cookie mix and would definitely like to taste my way around the product line should I ever see them in-store. However, the mix was a little too expensive for my liking, as it’s hard to justify paying over $9 for a single bag. Nevertheless, I’ll keep this mix in mind when I need to satisfy my oatmeal cookie craving!
