If you have followed my blog over the last month, you’ve probably picked up on the fact that I have been trying out Enjoy Life Foods’ new gluten-free, vegan, allergen-free baking mixes. Last, but not least of the four baking mixes, is the muffin mix, which arguably is the most versatile of the pre-mixed baking mixes.
As a busy college student with 8 AM classes, I often have no time to prepare breakfast in the dorm kitchen, as I have to get out the door at least 30 minutes before class begins. Muffins are the perfect way to start the day, giving me healthy carbs, protein, and probiotics, all without requiring utensils or dirtying dishes.
As I set out to make my batch of muffins, I decided to split the muffin mix in half to try it on its own merit as well as see how well it plays with mix ins. The mix makes approximately 10 servings, a claim that rendered well-portioned muffins, but could easily stretch to accommodate making a dozen with mix ins.
After doling out five plain muffins and five chocolate chip ones (made with Enjoy Life Foods’ own mega chunks), into the oven the muffins went for a suggested baking time of 10-20 minutes. Because mine seemed to be not quite ready at 20 minutes, I cooked them for a little longer until they achieved a light golden color and were cooked all the way through.
Although you’re welcome to eat the muffins while still warm- and I recommend doing so with still-gooey chocolate chips- the muffins in my opinion needed the extra time to cool down to come into their own. The crumb is light and moist without being too dry or too crumbly. The muffin base is sweet without being overpowering, but also can stand on its own sans mix-ins. I quite enjoyed layering the plain muffins with a layer of almond butter as “frosting.” The chocolate chip muffins, while still keeping it simple, were delicious without being too sweet, rendering them perfect for dessert or breakfast.
Overall I was very satisfied by the muffin mix. While it won’t stop me from making my own muffins from scratch when the mood strikes, this mix certainly gets a nod for its ease of use and innovative ingredients.
