When it comes to gluten-free baking, I rely on boxed mixes to do the heavy lifting for me. Playing the game of having to mix seven different types of flours that many from-scratch recipes call for just isn’t my cup of tea. With box mixes all I have to worry about is milk, eggs, oil, and maybe one or two other mix-ins.
However there are times when even box mixes seem too involved when I want a quick fresh-from-the-oven cookie fix. Luckily, Sweet Loren’s place and bake cookie dough can be ready and waiting in your fridge whenever a craving strikes. Magically able to transform from a refrigerated dough to delightfully fresh-baked cookies in under 30 minutes, Sweet Loren’s wins points not only for eliminating complicated cookie prep, but also virtually eliminating most most the mess involved with baking.
Formulated to be gluten-free, nut-free, dairy-free and vegan, I wondered if Sweet Loren’s gluten-free chocolate chunk cookie dough was too good to be true when I first spotted it at my local Giant. The dough only lasted a few hours in my fridge before I couldn’t resist putting it to the test.
Sweet Loren’s gets top marks from me for being transparent on their packaging. The dough is made in a dedicated facility free from both gluten and dairy (among other allergens), although for those avoiding soy and eggs, the dough is made on shared lines. Otherwise the list of ingredients is recognizable (and pronounceable) which is definitely a plus in my book.
The dozen cookies are pre-formed, so they easily go from fridge to baking sheet. No slicing or shaping required! The cookies are quite thick, so if you are looking for a thinner result, Sweet Loren’s website advises you can press the dough disks with a spatula before baking.
Due to their thickness, the cookies needed a bit longer than the packaging recommended and took about 20 minutes to bake. The end result was well worth it, as the finished cookies were absolutely picture perfect. Once cooled, they were chewy and had a perfect cookie to chocolate chunk ratio. Notes of vanilla and molasses paired perfectly with the creamy molten chocolate and it took all the self-restraint I had to not eat the entire batch. I’ve eaten a lot of chocolate chunk cookies in my gluten-free life, but Sweet Loren’s are unique in that they not only delivered on taste and texture, but deliver such as simple luxury as fresh-baked cookies that are safe and easy to make.
I definitely plan on keeping a package (or two) of these chocolate chunk cookies in my fridge going forward so that I can get a quick cookie fix whenever the mood strikes.
